Recipe: Macaroni and Cheese with a Twist

Today I’m bringing another recipe from The International Cheese Recipe Book. Enjoy!

Macaroni and Cheese with a Twist

8 oz grated Gruyere cheese

2 T grated Parmesan

1/4 cup smashed bread crumbs

1 lb macaroni

3 eggs

salt, pepper, and nutmeg

2 tsp butter

1 cup cream

Drop the macaroni in lightly salted water and let cook. Mix the egg yolks, Gruyere, cream, salt, pepper, and nutmeg together. Beat. Beat the egg whites and fold them into the mixture. Drain the macaroni and add it. Spread butter and bread crumbs into a souffle dish and then spoon in mixture. Place the dish in a larger, shallow dish of water and bake at 325 degrees for 45 minutes. Dollop butter and sprinkle on Parmesan five minutes before the time is up.
