Recipe: Spoon Bread

Today I’m bringing another recipe from The International Cheese Recipe Book. Enjoy!

Spoon Bread

1 1/2 cups finely grated Cheddar cheese

4 egg yolks

4 egg whites

2 cups scalded milk

1 cup yellow corn meal

1/4 cup butter

1/2 tsp salt

1 tsp sugar

Stirring constantly, slowly mix the scalded milk and corn meal. Stir until thick and smooth. Beat the egg yolks and remove corn meal from the heat. Mix the egg yolks and corn meal mixture. Slowly, blend in the cheese, salt, sugar, and butter and beat until smooth. Beat the egg whites till they peak, and fold into the mixture. Turn into a buttered casserole dish and bake for 35-40 minutes in a 375 degree oven.
