Recipe: Eggs Ricotta

Today I’m bringing another recipe from The International Cheese Recipe Book. Enjoy!

Eggs Ricotta

1 cup Ricotta cheese

1 dozen hard-boiled eggs

1/2 tsp dry English mustard

2 T chopped scallions

salt and pepper to taste

garnish with watercress and a dash of paprika

Shell the hard-boiled eggs and cut down the center lengthwise. Remove the yolks. Place yolks, ricotta, salt and pepper into a bowl and mash together. Scoop the mixture into the egg whites, garnish with paprika and watercress. Serve chilled.
