Recipe: Broiled Swiss Flounder

Today I’m bringing another recipe from The International Cheese Recipe Book. Enjoy!

Broiled Swiss Flounder

1/2 cup coarsely shredded Swiss cheese

2 tomatoes, dried

1 lb fillet of flounder

1 stick of butter

1 T grated onion

salt and pepper to taste

The flounder should first be washed and dried. Place the fish in a shallow baking dish that has been pre-buttered. Dot with butter. Season with salt and pepper and then spread the onions and tomatoes over. Place under the broiler at medium heat for approximately twenty minutes. Remove, sprinkle with the shredded Swiss and return to the broiler for 5 to 7 minutes. Serve.
