Recipe: Cheese Muffins

Today I’m bringing another recipe from The International Cheese Recipe Book. Enjoy!

Cheese Muffins

1 cup grated American cheese

1 egg

2 cups sifted white flour

3 T melted cooled shortening

3 tsp baking powder

1 cup milk

1 tsp salt

Sift the flour with the baking powder and salt and then mix with 3/4 cup of the cheese. Mix the egg shortening and milk together, and then stir into the cheese mixture with a fork. Spoon about 2/3 full into greased muffin pans and sprinkle the remaining cheese on. Bake in 425 degree oven for 25 minutes until brown.
