Recipe: No-Bake Cheesecake

Today I’m bringing another recipe from The International Cheese Recipe Book. Enjoy!

No-Bake Cheesecake

Filling:

3 cups beaten Cottage cheese

2 separated eggs

1 cup sugar

1 cup whipping cream

1 T lemon juice

1 tsp grated lemon/orange rind

1 tsp vanilla extract

2 T gelatin

Pie crust:

3/4 cup crumbled Graham Crackers

2 T sugar

1/4 tsp cinnamon

1/4 tsp nutmeg

3 T melted sweet butter

dash of salt

First- make the crust. Begin by mixing all your crust ingredients in a large bowl. Mold about 1/2 cup into a 9-inch pie plate. Refrigerate.

Begin the filling. Mix 3/4 of your sugar, the gelatin and the salt into a bowl and set aside. Mix the egg yolks and mix together and blend into the sugar/gelatin mixture. Remove it to a pan and place over a low flame, stirring constantly to thicken the mixture. After it thickens, remove from the heat and add the lemon juice, rind and vanilla. Chill. Stir occasionally until mixture firms.

Beat the egg whites and remaining sugar together until smooth and stuff. Set aside. Beat the Cottage cheese until creamy and fold in the egg whites and gelatin mixture. Whip the cream and fold it into the mixture. Scoop into the pie plate and sprinkle with the remaining crumb mixture. Serve chilled and firm.
