Recipe: Crisp Cheese Snacks
I have recently acquired a copy of The International Cheese Recipe Book by Evor Parry.
I’d like to share a few recipes from time to time. Enjoy!
Crisp Cheese Snacks
3 cups Cheddar cheese grated
3 cups fine, sifted white flour
2 tsp vegetable oil
1 tsp salt
1/4 cup corn starch
4-5 sprigs fresh parsley, chopped
4 T melted butter
3/4 cups cold water
Using a fork, mix salt, water, flour, and oil into a dough ball. Dampen a square of folded cheese cloth, cover, and let stand for approximately an hour. Roll the dough and cut into 4 pieces, then roll each piece as thin as possible. Sprinkle the grated Cheddar on each of the four sections and sprinkle with parsley. Then fold each section closed, pinching the edges closed and cutting into four more strips. Place in a buttered baking dish and cover with melted butter. Bake at 350 degrees for 25 minutes or until brown.
